Yorkshire Rhubarb Crumble

RhubarbIt is essential to get rhubarb grown in the Yorkshire triangle, sometimes known as Champagne rhubarb. It is grown in sheds, forced by candlelight, it has a beautiful pale pink hue and bags of flavour.

500g forced rhubarb
2 dessert spoons honey
2 dessert spoons butter
250g plain flour
150g unsalted butter
150g porridge oats
150g soft brown sugar
150g almonds (optional)

1. Cut the rhubarb into 4cm batons

2. Melt the butter and honey in a saucepan

3. Lay out the rhubarb on a baking sheet, pour over the butter and honey, roast for 5/10 mins until soft but still whole.

4. Rub together the butter and sugar

5. Add the flour and oats

6. Rub together with the butter and sugar mix.

7. Lay out the rhubarb in an oven proof dish, cover with the crumble mix

8. Bake in the oven until golden, serve with cream or custard
